Apples

To start simple I wanted to make a Cyser, so besides honey I need apples – plenty of apples. I have 3 apple trees in the garden but still it is late in the season, and the majority apples were overripe or down right bad. The appletrees I have are “Inger Marie” which I have no clue to what are called in English, sorry. It is relatively small apples with high acidity and a lot of taste. Mead of life!

About a year ago I decided that I would try to produce mead. Why mead you might ask? Well, I have always been interested in the process of brewing and I have made several batches of beer. Even though most have been great I always felt that I did not have control of the ingredients.
